Succulent, full-flavoured joint of grass-fed meat for a classic roast dinner

A real roast beef classic, the organic topside joint is equally at home quickly roasted and served pink as it is when slow-cooked and succulent. The topside is the external muscle at the top of the hind leg of the beef carcass which is also where our organic beef everyday steak comes from. It's a muscle that's seen some hard work and this is reflected in the open texture and rich flavour of the meat. Very delicate marbling keeps the meat moist and we wrap an extra layer of fat on top to ensure you get the very best results from your topside.

When you taste our beef you'll understand why we rear all of our cattle to the highest welfare and organic standards, graze them on grass and allow them to grow slowly to natural maturity. Not only is this the ethical way – the only way – to rear animals, it also results in meat of outstanding quality. The Organic Butchery roasting joints are full of rich, authentic flavour and because we hang our carcasses for 28 days before butchering them, our joints will not shrink in the oven.

At The Organic Butchery our beef comes from cross-bred animals with a Friesian dairy cow as mother and either a Simmental, Limousin or Shorthorn bull as father. This cross breeding results in animals with good meat distribution across the carcass and consistent quality in all the cuts. Our organic farming system ensures our animals live as naturally as possible. Our cattle are free range and grass fed – we don't stuff them with cereal concentrates to make them grow abnormally quickly – and we think you'll be able to taste this in their meat. The superior quality of a traditional cut like our organic topside joint really shines through.

  • The topside of beef is the external muscle at the top of the hind leg of the beef carcass which is also where our organic beef everyday steak comes from. It's a muscle that's seen some hard work and this is reflected in the open texture and rich flavour of the meat. Very delicate marbling keeps the meat moist and we wrap an extra layer of fat on top to ensure you get the very best results from your topside.

  • The cut of beef will dictate how it is cooked, for example steak favours unfussy cooking, sear each side in a blistering griddle pan, cooking for a minute or two in a hot pan will be sufficient for rare or medium rare, or a cut such as beef brisket favours slow cooking allowing the gelatinous fibres to melt away and the meat to tenderise.

  • When buying organic beef you are buying beef that has been farmed by a system that ensures the cattle have lived as naturally as possible. Our cattle are free range and grass fed – we don't stuff them with cereal concentrates to make them grow abnormally quickly – and we think you'll be able to taste this in their meat.   • We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

  • We can deliver to you Tuesday to Saturday.

    We will pick, pack and deliver your box the day you have requested.

    For every order, we'll send you a text message on the morning it is due to be delivered.

    Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

  • We have a minimum order of £50. 

  • Our Standard Delivery Charge is £4.95 (Tuesday to Friday). There is Free Delivery on Orders Over £120, Receive your order Before 12 pm for £6.95. Saturday Delivery is £6.95

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay cold and fresh at the same temperature for up to 40 hours. When you receive your box, simply refridgerate and cook before the use by date provided or freeze to enjoy at a later date.

    To keep your order cool and fresh we use gel ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or return them to us through our free packaging returns sevice.

    We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

     

  • You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.

    We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.

    As your product is perishable, you will not be asked to return it for us for re-selling.

    When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

    Can't Find the Answer?

    If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.

To make the most of the flavour of your topside, roast it in a 220˚C oven for 15 minutes, then cover with foil, turn down the temperature and roast for a further hour and a half, removing the foil for the last 15 minutes. Let the meat rest for at least 15 minutes before carving. It'll be juicily pink and luscious in the middle – perfect served hot or cold. Alternatively, casserole the joint in red wine and beef stock with some shallots for 3 hours before serving with creamy mash and crisp green cabbage.
