They might not be the prettiest cut on the counter but they're packed full of flavour and are every bit as nutritious as the rest of the fish. With just some gentle bubbling they make the freshest, purest fish stock or broth that can be used to add tremendous, authentic depth of flavour to all sort of recipes, from fish soups to hearty chowders and classic fish pies.

While wild fish can't be classed as organic, farmed fish can. At Coombe Farm Organic we work with a salmon farmer based in Northern Ireland to bring you some of the very finest salmon, farmed to the highest organic standards reared in the cold waters of the Atlantic Ocean. Both the welfare of the fish and the impact on the environment are given top priority at every stage in the process. 

  • Supplied: Insulated box at -18°C
  • Freezing: Will arrive frozen, use by best before date on packaging
  • Defrosted: Store between 0 - 5°C and use within 2 - 3 days

Delivery

 

  • We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

  • We can deliver to you Tuesday to Saturday.

    We will pick, pack and deliver your box the day you have requested.

    For every order, we'll send you a text message on the morning it is due to be delivered.

    Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

  • We have a minimum order of £40. There is no minimum order value or delivery charge if you collect from our farm shop

  • Our Standard Delivery Charge is £3.95 (Tuesday to Saturday). There is Free Delivery on Orders Over £90, Recieve your order Before 12pm for £6.95

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay frozen at the same temperature for up to 40 hours. Simply put them in your freezer after delivery or in your fridge if you want to defrost them and use them within the next few days.

    To keep your order frozen we use ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or simply snip, empty the water and pop in your plastic recycling.

    We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

  • We deliver our organic produce Tuesday – Saturday and you will be able to choose your preferred delivery day at the checkout. The delivery charge is £3.95.

  • Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

    Fisheries catch fillet and freeze all sustainable and organic fish before it arrives to us by blast freezing. It’s done at the point of the fishmongers filleting the fish, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.

    It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh fish would be much more challenging.

  • Sustainability is a key concept when it comes to choosing the fish that you eat. It's measured in three ways. Firstly, the number of fish taken from the sea must leave behind a healthy, productive population that can reproduce quickly enough to support the levels at which they're fished. Secondly, environmental impact on habitats, ecosystems and other species must be minimised. And thirdly, fisheries must be well managed, be humane and be able to adapt to environmental changes. At Coombe Farm Organic, we work with fishing partners who fish to the Marine Stewardship Council (MSC) standards with a responsible attitude that reflects our organic farming ethos.

Making the simplest fish stock couldn't be easier. Just make sure the gills have been removed from your organic salmon heads and give them a thorough wash to get rid of any blood. Then put them in a deep pan, cover with cold water and bring slowly to a gentle simmer. If you don't plan to eat the meat from the heads you can let them cook very gently for a couple of hours. Leave the stock to cool completely before straining out the heads.

To make a delicious soup of the salmon heads, cook them gently in water for about 30 minutes before draining and reserving the stock, then picking the meat off the heads, making sure you don't miss the cheeks. Return the stock to the pan and season with a splash each of mirin and light soy sauce. Add the picked meat along with some cooked noodles and dried seaweed. When the seaweed has softened, ladle the soup into deep bowls and garnish with shredded spring onion and fine slices of red chilli.
