Mutton is a meat that had a fairly serious fall from fashion and is only now making a comeback. Lambs are most usually slaughtered before they reach 12 months and produce meat that's tender and delicate. Mutton comes from older sheep, or, in some instances, from retired breeding ewes. The meat from these older animals has matured on the hoof meaning it has a greater depth of flavour and more robust texture. These combined characteristics make mutton an excellent meat for burgers – it holds together well, stays juicy and delivers punchy flavour every time.
