Our friends at Kitchen Garden Foods in the Cotswolds have combined the simplest ingredients to make a beautifully clear, jewel-like organic redcurrant jelly. And when we say simple, we mean really simple: just juice, sugar and water go into this jar. Redcurrants are pectin-rich and packed with flavour so they don't need any artificial additives to help them along. The natural tartness of the fruit juice is rounded out but not overwhelmed by the addition of sugar making this a jelly that's an ideal partner for rich meats like lamb or venison. Melted into sauces and gravies it brings complexity and just the right suggestion of balancing sweetness. Try adding redcurrant jelly to a sticky glaze for sausages or pork ribs.
Store in a cool, dry place, out of direct sunlight.
