Naturally lean and packed with iron, duck meat has great depth of flavour that's more comparable to goose than to chicken. It's a dark meat with plenty of bite and texture, which makes it perfect for coarse mincing and shaping into burgers. We don't mess about with added ingredients when we're working with such lovely, organic meat. So all you'll find in your burger is duck, plus a pinch of sea salt and a sprinkling of pepper.
The heartiness of the flavour of duck means you can really go to town with the accompaniments to your duck burger: it'll be more than able to hold it's own. On a toasted seedy bun, layer a spoonful of sweet mango chutney, your duck burger, a layer of melted blue cheese then a topping of celeriac slaw. Or go Asian-fusion with a brioche bun, lightly pickled red onions and a good drizzle of Chinese plum sauce. A rich New Zealand Pinot Noir will wash it down nicely.
