If you watch TV cookery shows, you might have seen chefs using the technique of sous-vide. It's unbeatable for cuts of meat that need gentle cooking, which is why we've chosen it for our slow-cooked beef osso buco. The meat is sealed in a bag with all of the gravy ingredients and is gently simmered in a water bath, at a regulated temperature, for a good long while. The bag holds in all the juices, so succulence is guaranteed. As the meat's suspended in the water, it cooks evenly throughout, so every mouthful is as succulent as the last.
