Organic Diced Lamb
A versatile cut that's convenient, too - great for stewing
Coombe Farm Organic diced lamb really is a cut to keep in the freezer at all times. Our butchers have taken prime cuts from across the lamb carcass, trimmed them meticulously then diced them into evenly sized chunks. With fantastic depth of flavour and tender texture with a good bit of bite, versatile diced lamb is best cooked slowly, with just the right proportion of fat to keep it moist during a slow-cook. You can spice your lamb up or keep it traditional. There's no prep and no wastage – all you have to do is decide what to cook. Try our diced mutton barley and samphire recipe created by Gill Meller for a delicious, hearty treat.

- Organic Diced Lamb (500g), Serves 4-6
Making the most of every carcass is key to our philosophy at Coombe Farm. After slaughter at a local abattoir, our lamb carcasses are hung on the bone at a controlled temperature for seven days. During this time the muscles relax and tenderise while residual moisture evaporates. This means that when it reaches our butchers the lamb is in top condition. With skilful, attentive butchery there's really very little waste.

Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.
-
All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.
You will find any product ingredients on the relevant product pages.

Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
Organic diced lamb is a real seasonal crossover: perfect in comforting winter stews. The real meaty flavour of our lamb is the perfect foil to earthy spices, hot chilli, acid-sweet tomato or grassy herbs. For a one-pot treat, slowly casserole your diced lamb in stock and cider with rosemary, garlic and cannellini beans. We love mixing ours in the flavours of the Mediterranean – red wine, lemon juice, olive oil, oregano and garlic and serving in warm flatbreads.

I made a lamb curry with one batch and a Spanish-style stew with the other, both slow-cooked, and this lamb was superb - succulent, full of flavour and irresistible. The lamb is fantastic, again it's the packaging. When I defrost the lamb the bags leak and you get a lot of mess. The lamb is fantastic, again it's the packaging. When I defrost the lamb the bags leak and you get a lot of mess.

I am unable to eat many cuts of meat with my frail teeth and gums. However, this lamb was unbelievably tender, when casseroled as a Greek dish on a low temperature for 3 hours........ and scrumptious! It was cut well without copious amounts of fat...
