Our skilled butchers have removed the legs from the bird, leaving the breast attached to the bone and the skin on. The wings are left attached to make sure your crown sits proud on the table.
At Coombe Farm all of our turkeys are Bronze birds. This is an old-fashioned breed that almost fell into extinction when white turkeys were chosen for intensive farming. Apparently bronze and black turkeys became less popular because dark pin feathers could be seen on the meat. Once slaughtered, our birds are dry plucked and waxed to make sure there are no pesky feathers left behind. The carcasses are then hung in a temperature controlled environment for at least 10 days, meaning the bird you receive will be in tip-top condition, tender as can be and packed with flavour.
