And even though this is an inexpensive joint - perfect for feeding a crowd - you'll find it has all the hallmarks of top quality Coombe Farm beef, coming, as it does, from our own herd of organic, grass-fed cattle.
Versatile as well as tasty, organic beef brisket does need the luxury of time. Six hours is good, overnight is best - just make sure it's accompanied by plenty of liquid, is tightly lidded and in a very low oven. Add a punchy red wine or robust dark stout to some rich beef stock for an excellent stewing liquor that will transform into an exceptional gravy. Alternatively, if you're feeling adventurous, why not brine and smoke your own pastrami or make an old-fashioned corned beef?
