Organic Diced Stewing Steak
A slow-cooking staple – flavoursome and versatile
At Coombe Farm Organic we take our organic diced stewing steak from the chuck of the beef carcass. This is a cut found in the animal's shoulder so it has an open-grained texture, great depth of flavour and a delicate marbling of fat. Coming from a hard-working muscle, stewing steak rewards long, slow cooking with melt-in-the-mouth tenderness and succulent meat that flakes under the fork. Need a recipe click here.
When time's short but you still fancy something hearty, try our ready-cooked beef stew.

Our farming system sets great store by high standards of animal welfare so we rear only grass-fed beef from animals that have lived natural, free-range lives. Our animals are cross breeds – their mothers are Friesian dairy cows and their fathers are either Simmental, Limousin or Shorthorn bulls. We like the even distribution of meat this results in, allowing us to offer top quality cuts from across the carcass. All of our beef is hung on the bone for three weeks after slaughter. This is important for slow-cooking cuts like our organic diced stewing steak as it allows the meat to relax and flavour to intensify.
FREQUENTLY ASKED DICED STEWING STEAK QUESTIONS:
-
Organic beef chuck steaks are cut from the chuck, found at the top of the front leg, towards the shoulder of the beef carcass. This is a big, hard-working muscle that yields characterful steaks with bags of flavour and plenty of bite. In texture, they're a bit like rump steak. Because chuck steaks are cut from a single muscle, they hold their shape and structure as they cook. They have a delicate marbling of sweet fat that melts away, revealing the open texture of the meat. Our expert butchers trim off any superficial fat so you can enjoy a hearty steak that's tender but really meaty.
-
The nature of organic beef chuck steak means it's best cooked very quickly or very slowly. Give it a flash fry on a smoking-hot griddle for just a minute or two on each side for pink-in-middle-crisp-on-the-outside results. Alternatively, beef chuck steak can be braised slowly in the oven for a couple of hours.
-
When buying organic beef, you are buying beef that has been farmed by a system that ensures the cattle have lived as naturally as possible. Our cattle are free range and grass fed – we don't stuff them with cereal concentrates to make them grow abnormally quickly. Our beef cattle have a good muscle coverage and powerful frames, resulting from crossing dairy cows with beef bulls, and are carefully butchered, making use of every part and meticulously trimming each cut so you don't have to.

Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.
-
All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.
You will find any product ingredients on the relevant product pages.

Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
Because it comes to you carefully trimmed and conveniently diced by our expert butchers, your stewing steak requires no preparation. To lock in flavour and maximise tenderness, make sure you sear the meat in a hot pan, browning it all over before setting it to slow cook. Try it in a juicy steak and kidney pie, either topped with buttery puff pastry or encased in a hearty hot-water crust. Alternatively, pop it in a slow cooker with seasonal root veg, rich beef stock and some hoppy, British beer for a real mid-week treat.
