Organic Whole Fillet of Beef, Serves 6-8

£97.50 £65.00 per kg

Fillet of beef is otherwise known as tenderloin, a name which is pretty self-explanatory. It's a loin muscle, found beside the sirloin, and it's exceptionally tender. It has no superficial fat and negligible marbling so needs careful cooking to preserve it's delicate flavour. The long, tapering fillet is made up of three distinct parts - the butt, the centre cut and the tail - and is a versatile piece of meat that lends itself to lots of different treatments. Because it's a slightly awkward shape, it's often split into three parts for ease of use. The butt is the widest part of the cut and is perfect for carpacchio, the centre cut (including the chateaubriand) is even in shape and density so ideal for beef wellington, while the pointed tail can be cut into steaks or roasted as a mini joint.

If you want a really magnificent centrepiece, a whole roast fillet is unbeatable. To cook it evenly can be tricky, though, so if you're planning to keep the tail on it's best to fold it under and secure it in place to prevent it cooking way more quickly than the rest of the joint. Sear in a very hot pan until all sides are browned, then roast for about 15 minutes. When the internal temperature is 50˚C the inside will be rare. Rest for 15 minutes wrapped in foil then slice thinly and serve with a punchy peppercorn sauce.

Farm and Animal Welfare

  • All our organic meat comes directly from Coombe Farm. Situated in Somerset, Coombe Farm was originally an organic dairy farm. One of the main aims of the farm is to be 100% sustainable – from solar energy to water supply and of course to the animals themselves. This means not only taking full responsibility but also full accountability of the animals, which leads to producing high quality organic meat directly on our organic farm. The calves are grass fed through to 28 months, slaughtered locally, hung for an appropriate length of time to create quality meat and then sent to a local butcher. Our organic lamb also comes directly from our Farm and is slaughtered and butchered locally.

We are certified by the Soil Association: the UK's largest organic certification body as well as by Freedom Food:, the RSPCA's farm assurance and food labelling scheme, which inspects farms to ensure they meet the strict RSPCA welfare standards.

  • Grass, grass and grass.

At Coombe Farm Organic, our cows and lambs do just exactly what they want to do: grazing on fresh grass on our organic farm fields in South Somerset. That makes them happy and us too.

  • Coombe Farm Organic is certified by the Soil Association, the UK's largest organic certification body. We are not only proud of this but we want to go further. At Coombe Farm, we not only believe in sustainability - we live it.

Organic food is food which is produced using environmentally and animal friendly farming methods on organic farms. These methods are legally defined and any food sold as 'organic' must be strictly regulated.

Organic farming recognises the direct connection between our health and how the food we eat is produced. Artificial fertilisers are banned and farmers develop fertile soil by rotating crops and using compost, manure and clover.

Organic animals enjoy the very highest welfare standards – they are truly free range and have plenty of space and access to fields. For more information please have a look at

Meat and Cooking

  • 100% organic meat - the best cuts from our Coombe Farm Organic beef and lamb.

Our ready-prepared products are also made only from our high quality organic meat. We add some simple ingredients to our ready-made products, such as salt and pepper, fresh herbs, spices or other basic ingredients, always of highest quality.

  • Yes, you can!

The meat will be sent in boxes directly to you, insulated with sheep’s wool which maintains a constant temperature up to 40 hours. Additionally, cooling ice pads will be used to extend the low temperature. So your meat stays frozen until it reaches your door.

  • You can easily keep your meat in the freezer for up to 6 months as it is vacuum-packed and blast frozen - but do you really want to wait that long?

  • Well, you could.

Smaller products like steaks, burgers and meatballs can be defrosted in your microwave or directly put in to your pan. But they need more sizzling hot fat in your pan and a longer time to cook as well as a longer rest in your pre-heated oven afterwards.

However we wouldn’t recommend it, as gently defrosting and then bringing your piece of meat to room temperature before cooking is the best thing you can do.

  • Yes, you can.

It is safe to freeze meat once it has been defrosted and then cooked. But it always has to cool down before you put it in the freezer. A special tip: divide your meal into (smaller) portions before you defrost it – it’s easier for you to then only defrost what you need!
