Halibut is the name for a flatfish from the flounders family and a very delicate fish. Our halibut comes from Gigha, a sustainable, award winning producer based on the beautiful Scottish Isle of Gigha. This company is specialised in the artisan production of sustainable Scottish Atlantic Halibut and recently started to smoke its own fish. Smoked to order each fish is carefully selected and harvested. It is allowed to rest and the fillets are cured for a day, they are then traditionally smoked using oak chips made from whisky barrels from the Kilchoman Distillery on Islay.
The result is absolutely fantastic and famous chefs like Alain Roux of the Waterside Inn are impressed with the product. And so are we: Smooth, cool white flesh with a mild smokey flavour: a melt-in-your-mouth. Try this smoked halibut as an exciting starter, accompaniment or as an alternative to smoked salmon.
