Duck is a distinctive, deeply flavoured meat that's fairly rich and a little bit indulgent. The duck carcass is less meaty than that of a chicken and is considerably fattier. Because ducks need fat to help them float you'll find a thick layer of fat running over the breast. Far from being a downside, the fattiness of duck works in its favour. It keeps the meat succulent and packs in a whole load of flavour. We've cooked our duck legs using the sous vide method. That means the meat is vacuum packed then very, very slowly poached in a bath of water that's kept at a consistent temperature. None of the juices – therefore none of the flavours – can escape during this gentle cooking process, so the end result is to-die-for tender and delicious.

Product FAQs

  • We deliver our organic produce Tuesday – Saturday and you will be able to choose your preferred delivery day at checkout. The delivery charge is £3.95.

  • Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.

It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.

  • All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.

You will find any product ingredients on the relevant product pages.

    Can't Find the Answer?

To heat your duck, allow it to fully defrost before removing all of the packaging and transferring the legs to an ovenproof dish. Cook at 180ºC for about 20 minutes until the skin is sizzling and the meat is piping hot at the centre. Serve with creamy dauphinoise potatoes and buttered greens, with a good dollop of sharp redcurrant jelly on the side. Cut through the richness of the meat with an acidic pinot gris or try a dry but fruity cider as an alternative.
