For meals where a bit of drama's required, pick a 3-bone rack of organic mutton and really impress your guests. The rack combines the succulent eye meat (the bit you normally see on a juicy chop) with a delicious layer of fat that melts through and bastes the meat as it cooks. Cooking this cut on the bone not only assures it stays moist, but it also contributes extra flavour to the meat during roasting.

At Coombe Farm Organic, our mutton comes from ewes who've retired from our breeding flock. That means they've grown to maturity naturally, have well-developed muscles and a strong skeleton. All of these things ensure their meat is strongly flavoured (but not 'gamey') and has excellent texture (but isn't stringy). Mutton's a distinctive meat that's having a bit of a renaissance right at the moment. With a cut like the 3-bone rack, you'll soon understand why.

Delivery

 

  • We deliver all around mainland Britain, excluding the Highlands and Islands. The delivery will be made within 24 hours upon placing the order or on a weekly-schedule for subscriptions.

    We can deliver to you Tuesday to Saturday, providing you place your order Monday to Friday, pre 12pm.

    We will pick, pack and deliver your box the Next Day or on the day you have requested.

    Orders placed Monday to Friday, after 12pm, will be picked, packed and delivered 1 working day later.

    Orders placed on a Saturday or Sunday, will be picked and packed on the Monday for delivery on the Tuesday or on the day you have selected.

    For every order, we'll send you a text message on the morning it is due to be delivered.

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay frozen at the same temperature for up to 40 hours. Simply put them in your freezer after delivery or in your fridge if you want to defrost them and use them within the next few days.

    To control the temperature in your box we use ice packs. When soaked in fresh water the pad can be frozen and will retain a low temperature for a long period of time. Reuse it for your picnic or a day out!

    Natural sheep’s fleece provides insulation for your order for up to 40 hours and can be reused for planting, filling cushions, arts and crafts and so much more. There are no limits to your creativity!

Product FAQs

  • We deliver our organic produce Tuesday – Saturday. Delivery charges for weekday delivery are £3.95 and Saturday delivery £6.95. You can also select pre-12 delivery option which is at a higher rate of £6.95 for weekday delivery and £8.95 for Saturday. If you spend over £80 you will receive free weekday delivery. The cut off period to get your order the next day is 12pm any order placed after that time will be delivered after 2 days. For example if you order after 12pm on Tuesday you will receive your box on Thursday.

  • Our products are sent to our customers frozen because when we started the business we looked into convenience for our customers. We found that sending the produce frozen meant that they could order for instance a month’s worth of produce and could go into their freezer until they are ready to use it. It also meant that there was less risk to the meat whilst been delivered as fresh meat can be delicate and risky.

  • All of our meat is butchered in house. In December 2018 our in-house butcher was built which means that we have full control of what is cut and also means that we can accommodate more requests from our customers.

Cooking your 3-bone rack of mutton to perfection isn't enormously tricky but you do have to keep your eye on the clock. We find that the timings given for cooking rack often result in very rare meat, so having a meat thermometer to hand is the ideal way of knowing when to take it out of the oven. After searing the skin of the rack until it's sizzling golden brown, roast it in a 200°C oven for about 20 minutes. When the internal temperature of the meat reaches 60°C your mutton will be pink and juicy in the middle so you can take it out when it's at about 55°C and give it a good 20-minute rest wrapped in foil. The residual heat from the bones will continue to cook it as it relaxes. Carve and serve with some rich red-wine gravy, celeriac purée and honey-roasted carrots for an understated but delicious supper.
