With long, cylindrical bodies and meaty white flesh, hake is a fish that has long been popular in European countries including Spain and France. In the UK, it has previously been overlooked in favour of cod or haddock but is starting to gain popularity now. Found throughout the waters around Europe, hake frequent deep water where they feed on smaller fish. Growing up to four feet in length, hake yield good-sized fillets with a mild flavour that makes it a good match for rich, tomato-based Mediterranean sauces. The firm, large-flaked flesh holds together, making hake fillets a good choice for deep frying or poaching. Or to make a delicious Fish Pie, yummy.

We work with suppliers based in Devon who fish in the cold, clean waters around the county, catching a diverse haul of seasonal species.

The delicacy of hake's flavour means you can be as simple or as complicated as you like with your accompaniments. Simple pan frying with brown butter, a squeeze of lemon and some chopped tarragon turns out simple but delicious results. Or turn to Spain for inspiration and pair your hake with a rich tomato sauce spiked with pimentón (paprika) and warmed with plenty of garlic. Add some chopped chorizo for an extra contrast of texture and serve over a bed of cannellini beans.
