For those who like their fish with plenty of meaty oomph, sea bass is a great choice. These are predatory hunters, which makes them muscular and lean. Their thickset bodies yield pinkish-white flesh with tightly packed flakes that hold together well when cooked. This makes them an excellent fish to cook as a whole fillet or in stews and soups. Expect a delicate, buttery soft flavour and texture. The silvery skin crisps to crunchy perfection under the grill and its oils pass to the flesh on cooking, for added succulence.

At Coombe Farm Organic we only stock sustainable fish and work with fishing partners who fish to the Marine Stewardship Council (MSC) standards with a responsible attitude that reflects our organic farming ethos. Sea bass are vulnerable to overfishing and so when UK wild bass is in short supply, we source the finest bass from  producers in Greece and Turkey.

Sustainability is crucial to our philosophy here at Coombe Farm. We make sure the fishing partners we work with are guided by sustainable fishing principles using MSC (Marine Stewardship Council) standards, with the aim of preserving enough fish for generations to come. Sustainability is also about making the most of everything we grow or produce. We're not in the business of taking the best bits off a carcass and chucking the rest away – we like to eke every bit of goodness out. Which is why we're enthusiastic advocates of making broths and stocks from bones. It might take a bit of effort – but it really is just a tiny bit – but it means you know exactly what's going into every element of your recipes. So you're in control of salt and preservatives and can tailor your stock to complement your dish. Sounds sophisticated, but is actually incredibly easy.

Delivery

 

  • We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

  • We can deliver to you Tuesday to Saturday.

    We will pick, pack and deliver your box the day you have requested.

    For every order, we'll send you a text message on the morning it is due to be delivered.

    Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

  • We have a minimum order of £40. There is no minimum order value or delivery charge if you collect from our farm shop

  • Our Standard Delivery Charge is £3.95 (Tuesday to Saturday). There is Free Delivery on Orders Over £90, Recieve your order Before 12pm for £6.95

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay frozen at the same temperature for up to 40 hours. Simply put them in your freezer after delivery or in your fridge if you want to defrost them and use them within the next few days.

    To keep your order frozen we use ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or simply snip, empty the water and pop in your plastic recycling.

     

    Sustainably Insulated

    We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

     

  • You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.

    We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.

    As your product is perishable, you will not be asked to return it for us for re-selling.

    When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

  • We deliver our organic produce Tuesday – Saturday and you will be able to choose your preferred delivery day at the checkout. The delivery charge is £3.95.

  • Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

    Fisheries catch fillet and freeze all sustainable and organic fish before it arrives to us by blast freezing. It’s done at the point of the fishmongers filleting the fish, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.

    It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh fish would be much more challenging.

  • Sustainability is a key concept when it comes to choosing the fish that you eat. It's measured in three ways. Firstly, the number of fish taken from the sea must leave behind a healthy, productive population that can reproduce quickly enough to support the levels at which they're fished. Secondly, environmental impact on habitats, ecosystems and other species must be minimised. And thirdly, fisheries must be well managed, be humane and be able to adapt to environmental changes. As Coombe Farm Organic sea bass is processed and frozen as soon as possible after landing, it's good enough to eat raw. It's freshness, coupled with the firmness of its flesh, mean it makes excellent sashimi or carpaccio. With a very sharp knife, slice the fish as thinly as possible and serve with a light dressing of lemon, herbs and capers. It makes an elegant, pared-back starter for a posh dinner. Sea bass is a good foil for robust accompaniments – try it with tomato-rich Mediterranean flavours or pair it with a zingy combo of chilli, lime and ginger.
