Organic Whole Turkey

King of the Christmas table!

There really is no other meal like Christmas lunch. If – like us – you look forward to it all year, then make sure you put a Coombe Farm Organic whole fresh turkey on the table to make sure it really is extra special. Cooked to golden perfection, super-succulent and mouth-wateringly tasty, this is one very good reason to wish it could be Christmas every day.

We agree that it's important to know where your festive bird has come from and how it's been reared. Our poultry farmer, Ross, produces all of Coombe Farm Organic's turkeys. His farm is just a hop, skip and jump away, nestled deep in the Devon countryside. Ross runs an organic system with animal welfare at its core. The turkeys have the freedom to roam in pastures or shelter in barns, as the mood takes them. They eat a natural diet, supplemented by the grass they graze. We only rear Kelly Bronze turkeys, an old-fashioned breed that provides a carcass with fantastic flavour and even coverage of meat. The natural flavour of the bird is made even better by slow growth to natural maturity. This takes 24 weeks and results in meat that's reliably juicy and tasty, with tender texture and just the right amount of fat.

Our Organic Whole Turkeys will be delivered fresh for Christmas and are available for delivery on 20th, 21st and 22nd December. Any Organic Whole Turkeys requested for delivery before then will be delivered frozen.

Once slaughtered, all of our turkeys are hung for at least 10 days. This process allows some moisture to evaporate (so you'll see no shrinkage in the oven) and the muscles to relax (so the meat is soft and flavoursome). Hanging, as well as the slow growth of the birds, means cooking times will be a bit shorter than you might expect for intensively reared birds. At 180˚C, plan for 20 to 30 minutes cooking time per kilo.

Our top tips for the perfect turkey are:

  • remove your bird from the fridge at least an hour before cooking, to let it come to room temperature. Again, this cuts down cooking time and allows everything to roast evenly.
  • don't stuff the cavity. This creates a huge, dense joint that'll take ages to cook. If you leave it unstuffed it allows the legs and breast to cook evenly, meaning everything's juicy. Cooking the stuffing in a separate dish also makes carving and serving easier.
  • remember that resting is just as important as cooking. It lets the meat relax and the juices to distribute evenly. The residual heat in the bird means it'll continue cooking while it rests, so be brave and remove it from the oven when it's a bit under the ideal 74˚C. Wrap it in foil and tea towels and the temperature will continue to rise while you get on with the veg.
  • to test when your turkey is done, pierce the thickest part of the thigh and check that the juices run clear. Or twist the knee joint; if it gives easily, the bird is ready.
  • don't panic! Follow our tips, have a tot of sherry, and all will be perfect.

Product FAQs

  • We deliver our organic produce Tuesday – Saturday. Delivery charges for weekday delivery are £3.95 and Saturday delivery £6.95. You can also select pre-12 delivery option which is at a higher rate of £6.95 for weekday delivery and £8.95 for Saturday. If you spend over £80 you will receive free weekday delivery. The cut off period to get your order the next day is 12pm any order placed after that time will be delivered after 2 days. For example if you order after 12pm on Tuesday you will receive your box on Thursday.

  • Our products are sent to our customers frozen because when we started the business we looked into convenience for our customers. We found that sending the produce frozen meant that they could order for instance a month’s worth of produce and could go into their freezer until they are ready to use it. It also meant that there was less risk to the meat whilst been delivered as fresh meat can be delicate and risky.

  • All of our meat is butchered in house. In December 2018 our in-house butcher was built which means that we have full control of what is cut and also means that we can accommodate more requests from our customers.

You will find all the ingredients on the relevant product pages.

  • We have a dedicated page which explains all the different cuts and where they come from. Find out more here www.coombefarmorganic.co.uk
