An excellent way to make delicious pork gammon more versatile
Cut from the hind leg of the pork carcass, gammon is, in essence, uncooked ham. It comes from an exceptionally hardworking group of muscles so it not only has fantastic depth of flavour, it also has beautiful firm texture and plenty of robust bite. A lot of people only think of cooking gammon at Christmas, which seems like a missed opportunity to us. With its distinctive fragrant intensity, gammon is as versatile as any pork cut. Coombe Farm Organic diced gammon is meticulously trimmed and evenly cubed, ready to add character to all sorts of dishes.
At Coombe Farm Organic, we cure our gammon using simple natural ingredients – just black pepper and sea salt – which gives the meat its characteristic fragrant intensity. Before refrigeration was widespread, curing was the traditional way of preserving meat. Over the years nitrates and nitrites found their way into previously natural curing mixes, with the specific purpose of killing bacteria. But we've all got fridges these days and curing is more about flavour than preservation. We don't believe there's any need for chemicals so we don't use them!
Ingredients: organic pork (99%), sea salt, organic raw cane sugar

At Coombe Farm we believe in sustainability. And we live it. Regarding our packaging:
Your delivery box is made of 100% recycled paper and is 100% recyclable.
To keep your order frozen we use ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or simply snip, empty the water and pop in your plastic recycling.
We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.
All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.
You will find any product ingredients on the relevant product pages.

Chunky and robust, organic diced gammon is perfect for any recipe in which you'd use ham. Pan fried and shredded it adds heart to pea soup or a thick vegetable broth. Marinate it in honey, soy and five spice them quickly fry until it's crispy and serve with pickled cucumber in hot steamed Chinese buns. For an indulgent supper, mix crisped gammon through a really cheesy mac and cheese, or cook it in a rich tomato sauce and add to a pasta bake.

Cooked with mince as a meatloaf, adds extra flavour. A little too salty so brought to boil in cold water first removes saltiness.Cooked with mince as a meatloaf, adds extra flavour. A little too salty so brought to boil in cold water first removes saltiness.

I mixed this with minced chicken and Steenbergs stuffing to make a meat loaf, slow cooked for two hours. The gammon added a depth of flavour and was beautifully tender.I mixed this with minced chicken and Steenbergs stuffing to make a meat loaf, slow cooked for two hours. Very helpful on the phone . The delivery is very prompt and the chicken I ordered is excellent . It is so good to know it in organic . I love the bone broth they do , very tasty .
Yeah - delivery was fine and packing was good. But you should ignore any rubbish legislation about recycling. There is a lot of packaging and all of it can be collected by you and re-used for my next order. You might say you are not permitted by govt regulations - but I say why should we listen to people who clearly do not have our interests at heart. We shouls take back our power and be our own authority and just be good - common sense individuals. I want to recycle this material - so can you collect it from me and use it again - I won't tell if you won't - who's in charge here.....
