Since around the 1950s, when turkey became the go-to meat for Christmas, the poultry industry has been focused on breeding heavier birds, with more breast meat than leg. Because consumers didn't much like black pin feathers, white turkeys have become the norm in intensive rearing systems. At Coombe Farm, our turkeys are all free range and we've chosen the traditional Bronze variety. This old-fashioned breed grows slowly on a diet of organic grass and cereals. Their carcasses are balanced between breast and leg meat and because they've had plenty of exercise they also have bags of flavour.
