As with all the animals we rear at Coombe Farm Organic, our turkeys live a free-range life and are slow-grown to reach maturity at a natural rate. We don't go for birds that have been selectively bred to lay down huge amounts of meat on the breast. We prefer an old-fashioned breed – the Bronze – that has a well-balanced carcass, yielding a good amount of leg and breast meat. Our sausages are made from a good mix of brown and white meat, giving them plenty of robust flavour as well as fantastic texture.
