The pork mince that we use to make our sausages comes from meat taken from across the carcass. While we do use 'trim' (the extra bits of meat that don't quite make a proper cut) we combine this with whole muscles to make sure the mince has excellent texture and plenty of body. A lot of pork's characteristic flavour actually comes from fat so we've added the right balance in with the meat to give you a really traditional pork sausage. Because our meat's so good and hearty we don't feel the need to stuff our sausages full of bready fillers. Which is excellent news if you're following a gluten-free diet.
