Any product is only as good as the ingredients that go into it, and charcuterie is no exception. We follow a simple natural process when making our biltong so the characteristics and quality of the beef and spices take centre stage. You'll taste natural flavours, not chemical preservatives and stabilisers. First of all, we cure our beef to drive out some of the excess liquid and let the spices penetrate right through the meat. The open texture of silverside makes it especially good for this. Once cured, we dehydrate the joints in a drying room until they have just the right levels of moisture. Finally, we finely slice the meat and package it up, ready to eat. Simple as that.
