Organic Pig Heart

Pan fry slices for a healthy offal salad or marinade over night before slow and low roasting

If you haven't had organic pig heart before, prepare to be pleasantly surprised. Inexpensive and really easy to prepare, heart meat has great depth of flavour that's surprisingly steaky. Of all the muscles in the pork carcass, it goes without saying that the heart has done a lot of work. It has literally not had a moment's rest so expect robust, open-grained texture with plenty of bite. When cooked very quickly or very slowly it's a succulent cut that delivers distinctive flavour. You could cook them quickly with some lovely stir fry vegeatables - we have the recipe on here!

If you're won over by the flavour of heart, try organic lamb heart and organic ox heart, too.

Offal is held in high esteem in many food cultures but has fallen somewhat from favour in this country. Organ meats are as tasty and versatile as any of the more valued cuts so we don't think they should be overlooked as part of a balanced diet. It also fits with our full-carcass philosophy to make the most of every part of the animal.

Product FAQs

  • We deliver our organic produce Tuesday – Saturday and you will be able to choose your preferred delivery day at checkout. The delivery charge is £3.95.

  • Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.

It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.

  • All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.

You will find any product ingredients on the relevant product pages.

Before cooking, rinse your organic pig hearts to make sure any clots of blood are washed away. Trim off any tubes, gristly bits or external fat that you don't like the look of. If you want to cook the hearts like steak, first cut them into thick slices then fry over a high heat until medium rare. Marinating them beforehand will add flavour and ensure tenderness. Try slow cooking your pig hearts whole with a moist stuffing of sausagemeat or breadcrumbs. Alternatively, cut into generous pieces and stew in a low oven for two or three hours in plenty of liquid (red wine and a rich stock works well) until tender and yielding.
