Capture the grassy pungency of the classic southern French seasoning blend with our organic herbes be Provence. This well-rounded combination of flavours brings depth and complexity to dishes where the use of individual herbs could be overwhelming. Starting from the basis of a bouquet garni – parsley, thyme and bay – floral freshness is introduced by marjoram and lavender. Celery seeds bring savoury intensity. This is a blend to have on hand when your dish is lacking an indefinable something, or blend a good spoonful with butter and lemon zest and push it under the skin of a chicken before roasting. You can turn to herbes de Provence whenever you need an all-purpose seasoning for any type of meat. Originating as it does in the Mediterranean, it works especially well with rich tomatoey stews, spiked with olives and garlic. Try sprinkling some over lamb chops before sizzling them on the barbecue or add them to hearty puy lentils and serve alongside roast pork belly.
