The perfect partner for pork or ham
Try organic sweet sensation rub to complement roast pork joints or to really make organic gammon sing. Pork has a slightly sweet undertone to it, given extra richness by the meat's natural fattiness. A rub of salt and sugar with aromatic allspice, nutmeg, cinnamon and thyme balances the sweet and the rich, enhancing the flavour of the meat. The festive associations of these flavours mean this is an excellent ingredient to add to honey and lemon when glazing a ham. Other fatty meats, like duck or goose, will also appreciate the fragrant zing of this blend.
Pork belly makes a really stunning and indulgent roasting joint when cooked slow and low. Slash the skin and massage in plenty of sweet sensation rub, making sure you get into all the cracks. Put the joint on a rack in a roasting tin, pour some cider into the tray (it shouldn't touch the pork) and add some quartered apples. Roast on a high heat for 30 minutes then on a low for a further two hours, adding a splash more cider as necessary. When the meat's cooked and tender, blast it under a hot grill for a few minutes to puff up the crackling.
