Rubbed into pork or chicken before roasting, Coombe Farm Organic's Jamaican jerk blend is an inspired short cut to sensational flavour. Fragrant allspice takes the driving seat, ably assisted by paprika and black pepper for a good hit of warmth. These are spices that work particularly well with the sweetness of fattier cuts (like pork belly or lamb breast) to bring a hint of the exotic.

Ingredients (all organic): Allspice, thyme, onion, garlic, cracked black pepper, cassia, paprika, chilli, nutmeg and ginger.

Jerk chicken is a classic dish and you can make yours as hot or as mild as you like. Marinate chicken thighs overnight in a combination of our Jamaican jerk spices, soy sauce, lime juice, brown sugar and grated fresh ginger. These are best cooked over the white-hot coals of a barbecue until crips and sizzling (add a handful of dampened wood chips for extra-authentic flavour) and served with traditional coconut rice and black beans.
