Organic Beef Short Ribs
Meaty, moist and moreish – slow cook for the tenderest award winning results
Cut from between the flank and brisket on the lower side of the beef carcass, beef short ribs are a real treat that you may not have experienced before. Meatier and heartier than their porky counterparts, Coombe Farm Organic's short ribs are perfectly layered with thick marbled meat and soft melting fat. The classic cut rib is shorter and stockier than the alternative Jacob's ladder cut. If you need some inspiration for a recipe why not try our rich short rib ragu with tagliatelle.

Our grass fed beef is always organically reared to the highest standards of animal welfare. That means you can trust that the meat you're eating is ethical, sustainable, top quality and good for you. Healthy animals equal healthy meat. Once slaughtered, our beef is hung on the bone for 3 weeks to ensure it's at peak condition before we butcher it. For a slow-cooking cut like beef short ribs, this hanging time is crucial. It allows the meat to dry out slightly, relaxing and tenderising. This means the grain is open and will absorb flavour while cooking and flake from the bone when it's done.

Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.
-
All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.
You will find any product ingredients on the relevant product pages.

Can't Find the Answer?
If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.
Marinades of all sorts are the best friends of organic short ribs. Experiment with fruity redcurrant jelly and full-bodied red wine, or opt for a dry rub of smoked paprika, garlic and brown sugar. A really slow braise in a flavour-packed gravy will result in tender meat made succulent by the melted fat and marbling. Careful slow cooking on a cool-ish barbecue can deliver amazing results, but can be tricky. If you're daunted, slow cook in the oven first then baste with a sticky marinade and finish over white-hot coals for a crunchy charred exterior over super-soft meat.

I love the meat from the short ribs. It's always so tender. I've cooked them both in a slow cooker and in a casserole in the oven. They benefit from long slow cooking until the meat just falls off the bone. Delicious! I love the meat from the short ribs. It's always so tender. After using it to make bone broth together with bone marrow bones. They go in the oven for some bbq ribs. Delicious, and the meat very tender. After using it to make bone broth together with bone marrow bones. They go in the oven for some bbq ribs. Delicious, and the meat very tender.

The beef spare ribs were very meaty and did not have much fat like some butcher's short ribs I have bought in the past. I cooked them in my slow cooker all day and the meat just fell off the bone. The meat was delicious and I made 4 hour slow cooked Asian style ribs. The meat fell off the bone. I wouldn't hesitate to order again from here. The meat was delicious and I made 4 hour slow cooked Asian style ribs. The meat fell off the bone. I wouldn't hesitate to order again from here.

Rich and beefy. So good and really filling. They shrink when you cook them and you think there might not be enough meat...BUT there is....because they are so so rich! Rich and beefy. Yet to eat them but they are currently falling apart tenderly in the oven and they smell delicious. Nice big ribs that nearly didn't fit in my pan! Yet to eat them but they are currently falling apart tenderly in the oven and they smell delicious. Nice big ribs that nearly didn't fit in my pan!
