The lambs we rear at Coombe Farm are born and raised within our high-welfare, organic system. We keep them with their mothers for as long as possible, to let them take advantage of the ewes' nutritious milk. Because we're not in a hurry to slaughter our lambs young we don't have to feed them concentrate to fatten them up. This means that when we do come to slaughter time, they're big but lean, not fatty. They've grown slowly and developed good muscle tone, rather than growing quickly and laying down fat. This means their carcasses are less wasteful and every cut has just the right balance of rich meat and sweet fat.
