Organic Nitrate-Free Unsmoked Gammon
A beautiful pork joint to enjoy at any time of the year
What's the difference between gammon and ham? Well, there isn't really one. Once you've boiled and roasted a gammon it becomes a ham. So gammon is an uncooked joint and ham is a cooked one. That's the simple answer. We have a perfect recipe here.
Lightly cured, we never use nitrites or nitrates in our gammon, instead simply combining organic demerara sugar and sea salt, to let the true flavour of our organic, free-range pork shine through. As a result, our gammon doesn't have that same lurid pink colour its more mainstream counterparts, but more than makes up for it with its mouth-watering flavour.

Coombe Farm Organic gammon joints are cut from the hind leg of the pork carcass. This is a fabulously complex piece of meat, comprising a powerful group of lean muscles, their connective tissues and a generous layer of fat. The flavour is intense and the texture robust. We lightly cure our gammon joints, combining the natural flavours of organic juniper and bay with sea salt. We never use nitrites or nitrates.

You can cook a gammon by boiling it or use a combination of boiling, then finishing by baking. At Coombe Farm Organic, we like to use the latter, we boil our gammon then for the last 20 minutes, coat the gammon in a delicious glaze of honey and mustard and finish baking in the oven.

The difference between gammon and ham, is really quite simple, gammon is sold raw and needs to be cooked, when it is cooked it then becomes ham.

Soaking a gammon removes the excess salt used when curing it, but it is becoming a thing of the past. Our gammon joints are brined tand we never use nitrates, nitrites or any other chemicals in our smoked gammon, so you can be certain that the distinctive flavour is purely natural. We therefore, do not soak our gammon joints prior to cooking it, we simply boil our gammon for 20 minutes per 500g, plus 20 minutes extra. You can add extra flavour to the cooking liquor with all sorts of Christmassy spices, oranges and lemons and even a good splash of cider. Once boiled, smear on your choice of glaze – honey and mustard, marmalade or maple syrup are all good choices – and roast until just starting to brown (about 20 minutes) in a moderate oven. Make sure you keep an eye on it, though, as sugary glazes can easily catch and start charring.

No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.
Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.
As your product is perishable, you will not be asked to return it for us for re-selling.

Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.

All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.

The traditional way to cook a gammon is in two stages. Firstly, cover the joint in water, bring to the boil and simmer for twenty minutes per 500g, plus twenty minutes extra. If you want to whack in extra flavour at this stage, add spices to the cooking liquid or substitute some of the water with apple juice or cider. Once boiled, drain the joint, trim some of the fat from the top and stud the outside with cloves or star anise. Glaze with honey and mustard or marmalade and roast in a medium oven for about half an hour.
If you're keen to try something without the scent of Christmas spices, try braising the gammon and serving it with homemade Boston baked beans. Or give it a taste of the tropics with a pineapple and chilli glaze. For real deep-south indulgence, go the whole hog and boil your gammon in cola – it sounds bonkers but it really gives the perfect, sticky sweet-sour balance.

It was very tasty meat, but I think my mistake was cooking it in a pressure cooker. I normally cook gammon in a slow cooker but thought I'd do this one differently . First time we bought a gammon from CF and it won't be the last. I'd recommend soaking it before cooking (which I didn't do) as it's pretty salty.
