On the list of joints that have 'celebration' written all over them, organic whole of rack of venison certainly holds a position somewhere near the top. Picture yourself carrying it to the table, imagine the faces of your guests – impressive, right?

A rack is essentially a collection of chops joined together, and the meat is buttery soft, with hearty but refined flavour. Venison is a distinctive meat, with deep claret-red colouring and very little marbling. This leanness makes it a healthy choice and means it's best cooked medium rare in order to preserve its succulence. Try roasting it in a salt crust to seal in all the juices and bring bit of drama. Crack open the crust at the table, revealing the joint beneath in all its glory.

At Coombe Farm Organic, our venison comes from a herd that roams the parklands of Somerset's Sharpham Estate. Deer reared in this kind of environment have the best of all worlds. They're free to live an almost entirely wild life, following their natural instincts, eating grass and browsing on trees and undergrowth. But their numbers are managed, their wellbeing is monitored and, if necessary, their diet is supplemented – often with the by-product from Sharpham's spelt production. A life this wild is reflected by the quality of the meat – active muscles yield well-textured cuts packed with mineral richness and singular flavour.

Delivery

 

  • We deliver all around mainland Britain, excluding the Highlands and Islands. The delivery will be made within 24 hours upon placing the order or on a weekly-schedule for subscriptions.

    We can deliver to you Tuesday to Saturday, providing you place your order Monday to Friday, pre 12pm.

    We will pick, pack and deliver your box the Next Day or on the day you have requested.

    Orders placed Monday to Friday, after 12pm, will be picked, packed and delivered 1 working day later.

    Orders placed on a Saturday or Sunday, will be picked and packed on the Monday for delivery on the Tuesday or on the day you have selected.

    For every order, we'll send you a text message on the morning it is due to be delivered.

  • We have a minimum order of £30 simply for sustainability reasons in order to minimise packaging, delivery and the environmental footprint.

  • If you spend over £80 your delivery will be free of charge. For orders under £80 we have to charge for delivery. Please have a look at the details:

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay frozen at the same temperature for up to 40 hours. Simply put them in your freezer after delivery or in your fridge if you want to defrost them and use them within the next few days.

    To control the temperature in your box we use ice packs. When soaked in fresh water the pad can be frozen and will retain a low temperature for a long period of time. Reuse it for your picnic or a day out!

Product FAQs

  • We deliver our organic produce Tuesday – Saturday. Delivery charges for weekday delivery are £3.95 and Saturday delivery £6.95. You can also select pre-12 delivery option which is at a higher rate of £6.95 for weekday delivery and £8.95 for Saturday. If you spend over £80 you will receive free weekday delivery. The cut off period to get your order the next day is 12pm any order placed after that time will be delivered after 2 days. For example if you order after 12pm on Tuesday you will receive your box on Thursday.

  • Our products are sent to our customers frozen because when we started the business we looked into convenience for our customers. We found that sending the produce frozen meant that they could order for instance a month’s worth of produce and could go into their freezer until they are ready to use it. It also meant that there was less risk to the meat whilst been delivered as fresh meat can be delicate and risky.

  • All of our meat is butchered in house. In December 2018 our in-house butcher was built which means that we have full control of what is cut and also means that we can accommodate more requests from our customers.

Your organic whole rack of venison will come to you French trimmed by our butchers. That means the bone ends have been cleaned of meat, so once carved you can go the full Henry VIII and pick up your venison rib with your fingers. Such decadence. While cooking your venison can be fairly simple, timing is the key. Sear the rack in a very hot pan until the outside is sealed, golden brown and crispy. Then pop it into a hot oven (around 200°C) and roast it for about 25 minutes. Test the thickest part of the meat with a thermometer – 57°C to 60°C will give medium-rare results. Once cooked, remove the joint from the oven, wrap well in foil and cover with a tea towel. After a rest of 20 or so minutes, it'll be ready to carve. Aromatic spiced red cabbage and a sauce of tart berries make excellent accompaniments, as does a good dollop of hot horseradish.
