A pork chop for a healthy appetite, or the perfect mini roasting joint
Coombe Farm Organic's organic ultimate pork chop is a really special cut. It has all the taste, texture and versatility of a full-sized roasting loin, but it's, well, mini. Perfect for serving two or three, it means you can enjoy all the joys of a roast quickly and without lots of leftovers. Or, if you have a large appetite and one normal-sized pork chop doesn't suffice, our ultimate pork chop is just the thing. The loin comes from high on the back of the pork carcass, running from behind the shoulder towards the rump (or 'chump' as it's called on a pig). These are important, hard-working muscles that run along each side of the spine so loin is a piece of meat that has really hearty texture and bite. We cut our loin with the bone in and a generous layer of superficial fat, meaning you'll end up with a mini roast that's juicy and intensely flavoured.

Pigs are famously intelligent creatures. They're playful, inquisitive, sociable and quite often stubborn. Because they're natural foragers they can thrive in most habitats where grass, leaves, roots, fruit and nuts are available. As omnivores, they also enjoy digging up worms and insects with which to supplement their diet. As it's such a core instinct to pigs, we think they should have the freedom to rootle to their heart's content. That's why we rear our pigs in an organic, sustainable system that allows them to live outdoors, following their instincts and behaving in a generally piggy manner.

Your delivery box is made of 100% recycled paper and is 100% recyclable.
To keep your order frozen we use ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or simply snip, empty the water and pop in your plastic recycling.
We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.
We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.
It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.
All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.

If you're going for a traditional roast with your mini pork loin, make sure you sear it first in a really hot pan. Using tongs to hold it upright, give the fatty edge a really good browning: not only will this add flavour, it'll start rendering down the fat to keep the meat super-moist. Once seared, pop the loin into an oven pre-heated to 180˚C. When the internal temperature reaches about 60˚C (after around 30 minutes) remove the meat from the oven and let it rest for a few minutes before serving. For ready made apple sauce, core two apples, leaving the skin on, and put them into the roasting tray with the pork. They'll cook down to a puree inside the skin, ready to be scooped out.
