It's in the slow-cooking cuts like silverside, brisket or shin that the real quality of Coombe Farm Organic's beef shines through. These all include muscles that need time to mature, because with maturity comes depth of flavour and really robust texture. Animals that are fattened up quickly and slaughtered young don't have time to develop that character. In our organic system, cattle grow to at least 2 years. They roam freely in our West Country pastures, so they grow big and strong on a natural diet and with plenty of exercise. To make the most of our beef carcasses, we hang them on the bone for 3 weeks, assuring you of meat that's in peak condition.
