Beef skirt steak is an under-rated cut that's seen as being a bit less, well, glamorous when compared to other steak cuts. Here at Coombe Farm Organic, we urge you to think again about this very special piece of meat – it's got a lot more to offer than you might think. Beef skirt is a long, thin internal muscle that does the job of operating the beef animal's diaphragm. That means it's in charge of breathing, so it's certainly a hard worker. This hard work translates into the really intense beefy flavour and an open-grained texture that gives the skirt steak a bit of stretch. Forget what you've heard about this being a tough cut. It does have a bit of bite, but that's to its advantage – making it a really satisfying steak when cooked quickly and left pink and juicy inside. 

As an alternative, both organic beef hanger steak and organic beef bavette steak have similar characteristics to beef skirt steak.

At Coombe Farm Organic, our expert butchers practise what's known as 'seam' butchery. That means they work with the anatomy of the carcass to retain the integrity of each muscle. Cuts that are made up of single muscles, rather than a collection of muscles cut in a slab, are easier to cook and benefit from consistency of texture and flavour. The muscle that makes up beef skirt works alongside the muscle that becomes bavette steak. While the two are very similar, the bavette is a slightly different shape and has a looser texture. 'Seaming' these two cuts out separately lets us preserve and appreciate their subtle but distinctive differences.

  • We deliver all around mainland Britain, excluding the Highlands and Islands. The delivery will be made within 24 hours upon placing the order or on a weekly-schedule for subscriptions.


    We can deliver to you Tuesday to Saturday, providing you place your order Monday to Friday, pre 12pm.

    We will pick, pack and deliver your box the Next Day or on the day you have requested.

    Orders placed Monday to Friday, after 12pm, will be picked, packed and delivered 1 working day later.

    Orders placed on a Saturday or Sunday, will be picked and packed on the Monday for delivery on the Tuesday or on the day you have selected.

    For every order, we'll send you a text message on the morning it is due to be delivered.

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, which ever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay frozen at the same temperature for up to 40 hours. Simply put them in your freezer after delivery or in your fridge if you want to defrost them and use them within the next few days.

    To control the temperature in your box we use ice packs. When soaked in fresh water the pad can be frozen and will retain a low temperature for a long period of time. Reuse it for your picnic or a day out!

    Natural sheep’s fleece provides insulation for your order for up to 40 hours and can be reused for planting, filling cushions, arts and crafts and so much more. There are no limits to your creativity!

Product FAQs

  • We deliver our organic produce Tuesday – Saturday. Delivery charges for weekday delivery are £3.95 and Saturday delivery £6.95. You can also select pre-12 delivery option which is at a higher rate of £6.95 for weekday delivery and £8.95 for Saturday. If you spend over £80 you will receive free weekday delivery. The cut off period to get your order the next day is 12pm any order placed after that time will be delivered after 2 days. For example if you order after 12pm on Tuesday you will receive your box on Thursday.

  • Our products are sent to our customers frozen because when we started the business we looked into convenience for our customers. We found that sending the produce frozen meant that they could order for instance a month’s worth of produce and could go into their freezer until they are ready to use it. It also meant that there was less risk to the meat whilst been delivered as fresh meat can be delicate and risky.

  • All of our meat is butchered in house. In December 2018 our in-house butcher was built which means that we have full control of what is cut and also means that we can accommodate more requests from our customers.
