Versatile and nutritious, venison is one of the leanest meats you can get. It's also protein-rich without being highly calorific and (our favourite bit) it tastes delicious. Indulgent cuts like racks or saddle fillets make spectacular centrepieces for special dinners, while more homely cuts like diced or minced venison can be used to put a gamey twist on your favourite recipes. All of Coombe Farm Organic's venison is reared on ancient parkland in Somerset. The deer live a wild life, contributing to the maintenance of the parkland that they roam. While they're mainly grass fed, the deer also eat the rusk that's a by-product from the estate's spelt production. Not only does this reduce waste, but the deer thrive on it.
