On regular beef cattle, the muscles around the ribs have worked hard during the animal's life. On a dairy cow, these muscles have worked even harder. But that doesn't result in toughness, it results in fantastic texture and bite and a depth of flavour you may not have experienced before. At Coombe Farm we're keen to run as sustainable an operation as possible, and that means looking for ways to maximise the output from all our animals while maintaining the highest standards of welfare. So we're following the example of our Spanish counterparts and taking fantastic, well-matured beef from dairy cows who no longer produce milk.
