Recently, the Spanish tradition of 'Basque Beef' has been gaining attention in the UK. Farmers in the Basque region take retired dairy cows and, rather than slaughtering them immediately, let them run on, fattening and reconditioning them after a lifetime of hard work. The quality of the meat they produce is the stuff of legend. So we decided to try it ourselves. Using retired dairy cattle means they're well-aged animals who've lived in our high-welfare system, grazing organic grass all their lives. A cut like bone-in brisket perfectly reflects the character and quality of the meat that comes from an older cow.
