Although the deer that produce our meat are technically farmed, they're not managed or handled in the way domesticated livestock like sheep, cattle or pigs are. They're treated and respected as wild animals at all times, and live in an environment and eat a diet that reflects their natural way of life. They browse trees and hedges as well as grazing grass and undergrowth. When necessary, they're supplemented with hay and organically grown feed crops. Deer are exceptionally sensitive and prone to stress, so intervention is kept to a minimum.
Our sausages are hand-made using traditional methods in our on-farm butchery. What’s important to us is letting the quality of our slow-grown organic meat shine through. That means only natural ingredients, in their purest forms, and definitely never, ever any nasty fillers, preservatives or additives. We add organic Scottish oats to each recipe to create a texture with hearty bite and substance, and a mix of organic herbs and spices to enhance the flavour of the meat.
