In taking retired dairy cows and growing them on for beef, we're honouring the Spanish tradition of Basque beef. This is beef from very, very old cows that delivers a flavour that's unique and robust. Old dairy cows wouldn't normally be taken into a beef system, but we decided – in accordance with our waste-minimisation policy – to see if this was meat that we could make use of. The cows, once they've finished dairy duty, are given time to gain condition, eating our finest West Country pasture and having a rest from calving and milking. The result is stunningly flavoursome meat with a really distinctive character. Definitely too good to miss out on.
