A versatile, tasty pork joint that's delicious roasted or made into gammon

You'll most likely know leg of pork as the joint that becomes gammon or ham. It's perfect for these treatments as it has really fantastic flavour, lean meat and robust structure. Cut from the top of the hind leg of the pork carcass, organic leg of pork is also delicious when cooked as a traditional roast. It's worked hard, though, so make sure you give it a bit of time to cook through and yield tender, juicy meat. For ease of preparation, our butchers have boned, rolled and tied this joint, ready to be popped into the oven.

All The Organic Butchery pigs are born and reared in a healthy outdoor environment, with access to plenty of room in a pig ark if they need shelter from the elements. The piglets get plenty of exercise and build up strength by playing boisterously. They also have the chance to wallow, rootle and get up to mischief as their instincts dictate.

Pigs have a hard life in industrial farms. They're highly intelligent animals, driven by strong instincts. When they're deprived of the ability to follow these instincts they become stressed and prone to fighting. At The Organic Butchery, we believe pigs should live in sociable family groups; they should live outdoors for as much of the year as possible and they should be able to rootle with their snouts and wallow in mud. The sustainable, organic system in which our pigs live has animal welfare at its core and produces amazing meat as a result.

FREQUENTLY ASKED PORK QUESTIONS:

  • Organic pork comes from organic pigs that have been reared in accordance to high welfare organic standards, they are raised a nature intended, living active lives outdoors, foraging and exercising freely. Our pigs are slow grown unlike intensive farming, this gives their muscles deep colour and robust flavour.

  • When choosing any meat to purchase, it is worth carrying out some research. There are a number of studies that suggest organic pork is a healthier option – higher in Omega 3, Amino Acids and Healthy Fats. There are also several other reasons why choosing organic pork is a good idea. They range from the contribution of organic pork to climate change, animal welfare and the use of pesticides and medicines used in the farming of conventional pork animals having a detrimental effect on our health.

  • At The Organic Butchery, our pigs are fed on a diet of grass, hay and concentrated food that helps them to grow at the rate nature intended. .

  • Pigs cannot survive only on grass, they also need some grain in their diet, this is why you will not find ‘grass fed pork’ on meat packaging, unlike beef which can survive on grass alone. Delivery

 

  • We deliver all around mainland Britain, excluding the Highlands and Islands. You will be able to choose your preferred delivery slot at checkout.

  • We can deliver to you Tuesday to Saturday.

    We will pick, pack and deliver your box the day you have requested.

    For every order, we'll send you a text message on the morning it is due to be delivered.

    Our courier will leave it in your requested safe place if you would prefer a contactless delivery.

  • We have a minimum order of £50. 

  • Our Standard Delivery Charge is £4.95 (Tuesday to Friday). There is Free Delivery on Orders Over £120, Receive your order Before 12 pm for £6.95. Saturday Delivery is £6.95

  • No. You can leave a message with your order telling us where you would like to have your box placed. It would be best placed somewhere cool or at least in the shade – especially during the hotter months of the year. Our products will stay at the same temperature for up to 40 hours, so just make sure that you can pick up your order within that time.

    Our couriers will send you a text message or email, whichever you prefer, giving you an hour slot when your box will arrive. If that doesn’t suit you, some options will be provided to make your delivery more convenient.

  • Our products will stay cold and fresh at the same temperature for up to 40 hours. When you receive your box, simply refridgerate and cook before the use by date provided or freeze to enjoy at a later date.

    To keep your order cool and fresh we use gel ice packs which will retain a low temperature for a long period of time. Reuse them for a picnic or return them to us through our free packaging returns sevice.

    We use paper pulp sheets to insulate the box. They are great for craft projects or can also simply be recycled with paper waste.

     

  • You can cancel your order within two hours after your online purchase. We can not cancel an order after this period.

    We hope that you enjoy our products. But if for any reason you are unhappy, please let us know why within 28 days of delivery, by sending us the batch number and the reason why you are disappointed with the product. Do not throw the product away as we may need to recall it to confirm the problem.

    As your product is perishable, you will not be asked to return it for us for re-selling.

    When we have looked at the evidence, we will then consider reimbursing you by means of a credit for a future order or resending the product. We will do our very best to respond as quickly as possible and try to resolve it.

Pork is perfect when paired with earthy spices and pungent garlic. Make a heady rub for your organic leg of pork by grinding juniper berries, fennel seeds, pink peppercorns and sea salt to a coarse powder in a pestle and mortar. Add about five big cloves of garlic and pound to a paste, adding a smidge of oil to make it a rubbing consistency. Smear all over the joint, rubbing it into the skin and around any folds of meat. Put the meat into an oven pre-heated to 220˚C for 30 minutes then reduce 180˚C and roast for a further two or three hours. The skin will be crisp and crunchy, the meat moist and fragranced with the spices. Serve with a rich, fruity gravy, creamy dauphinoise potatoes and seasonal greens.
