At Coombe Farm Organic, our lambs grow up free-range and grass-fed. We don't slaughter them before eight months, which allows them to reach natural maturity at their own pace. Eight months may seem young, but compared to lambs in more intensive systems it really isn't. The difference this makes to the meat is immense. We want lamb that has proper flavour and texture, and you don't get those by growing animals super-quickly and slaughtering them very young.
