Organic Hot Smoked Duck Breast

Fillets of Juicy Duck breast with a hint of smoky sophistication - part of our cooked range

Organic hot smoked duck breast is a bit of a revelation. It combines the delicate but distinctive flavour of our high-welfare, organic peking ducks and infuses it with an earthy (but not overpowering) smokiness. This adds another dimension to familiar recipes by layering flavours and intriguing your taste buds. If you're a fan of spicy fajitas or with a winter smorgasboard, give it a try and add a little twist of something different to the supper table.

Smoking is an ancient way of preserving food that just happens to lend it a fantastic flavour, too. There are lots of new-fangled smoking techniques, but we like the old-fashioned ways the best. This means a low-tech smoke-house and all-natural woodchips that smoulder slowly to let their flavours penetrate right through the meat. There are two ways of smoking food – either cold or hot. Cuts like bacon and gammon are cold smoked, meaning the wood smoulders but doesn't generate heat. So they must still be cooked afterwards. During hot smoking, the wood creates both smoke and heat so the food cooks and infuses at the same time. That means hot-smoked food doesn't need further cooking, though it can be warmed through before eating.

  • Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

We use blast freezing to preserve all of our meat products. It’s done at the point of butchery, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.

It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.

  • All of our meat is butchered in our in-house butchery by our small team. This means we have full control of what is cut and also means that we can accommodate more requests from our customers.

Pep up lunchtimes with an organic hot smoked duck breast sandwich on nutty granary bread. The cool clean flavours of crisp lettuce and juicy tomato complement the duck's smokiness. A little dollop of garlicky mayo doesn't go amiss, either. Or add some smoked duck breast to a charcuterie board to bring a juicy contrast to the saltiness of olives and cured meats.
