Organic Half Shoulder of Mutton (Bone In)

Simple but sophisticated joint from our grass-fed, organic mature lamb, with the bone in to make it seriously tasty

*Sorry that we’re currently out of stock of our organic mutton. We hope to be able to offer it again later in the summer so do check back.

Roasts don't get much more traditional than with an organic shoulder of mutton as the centrepiece. This is a seriously delicious cut - a slow roast will reward you with intense, rich flavour, offering just the right amount of bite. Mutton is renowned for being hearty and earthy and those are qualities you'll find in abundance when you tuck into this joint, accentuated by the fact we hang it for a week before our butchers cut it. They have left the shoulder on the bone for a deeper flavour.

At Coombe Farm Organic, all of our livestock is reared in high-welfare systems and our land is managed according to stringent Soil Association rules. That means the pasture our livestock grazes isn't treated with chemicals so their meat is clean and untainted. Our flocks of sheep live outdoors year-round, only coming indoors very briefly to lamb. In the summer they eat fresh meadow grass and in the winter they're supplemented with hay and silage made on the farm. Living on this diet lends our mutton an authentic sweet and herby flavour that's a true taste of tradition.

  • Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh meat would be much more challenging.

    Can't Find the Answer?

If you cannot find the answer to your question and would like to speak to someone contact us and we will be happy to help.

Your organic shoulder of mutton is a versatile cut that can be roasted in the traditional way and served with crispy roast potatoes and a generous dollop of mint sauce. Or it can be rubbed with aromatic spices and pot roasted until it's so tender it's falling apart. One of our favourite ways to cook it is to marinate it overnight in yoghurt and Indian spices before giving it a leisurely roast in the oven until it's cooked through (40 minutes per 500g, plus 40 minutes extra at 170°C fan) then throwing it on the hot grill of the barbecue to sizzle and char. Serve with flatbreads cooked over the coals, a herby salad and some dhal.
