As a food culture, we've grown used to discarding or ignoring the parts of a carcass that we find icky. In fact, some bits have fallen so far out of favour or are considered so distasteful that you're unlikely to even see them. At Coombe Farm we believe that every part of a carcass, especially the offal, should be utilised – out of respect for the animal and in recognition of the work that's gone into rearing it. And what we definitely shouldn't ignore is the fact that offal represents some of the best nutrition we can get from meat. All that gelatin in trotters? It's a versatile ingredient we should definitely get reacquainted with.
