Our organic fillet steak is cut from the prized fillet – an internal muscle nestled beneath the sirloin. This is a muscle which really hasn't worked hard during the animal's life – even when it's one of our slow grown cattle. The result of this leisurely life is a piece of meat that is lean with only the most delicate marbling and the finest of grains. This means our organic fillet steak has a subtle and refined flavour.
