Because our birds are slow grown and the carcasses have been hung, they'll take less time to cook than an intensively reared bird. Plan for 30 minutes cooking time per kilo, but test by sticking a skewer in the thickest part of the breast. As soon as the juices run clear, remove from the oven and wrap the crown well, letting it rest for at least half an hour before carving.
