ChalkStream® Trout Fillets

Fresh water fish with a delicate texture and mild flavour

Our fine English ChalkStream® Trout is grown on the world famous Test and Itchen Rivers in Hampshire. Slow grown for 2 years in fast flowing pure chalk stream water, these artisan farmed trout are raised in conditions as close to wild trout as possible, to create an exceptionally lean fish with a unique and delicate taste. Any overflow water passes through specially designed settling channels to remove any waste before returning to the river, and this comes through in the clarity of flavour.

ChalkStream® farms are fully segregated systems, which minimises the impact on the unique chalk stream environments of the main rivers. The outflow from the farms pass through specially designed settling channels to remove waste and ensure the water returns to the river in the same class A rated condition. The Test and Itchen Rivers are two of the most highly monitored rivers in the UK and the farm outflows are subject to a constant testing regime by the Environment Agency to ensure water quality. In contrast to sea cage and loch reared fish, ChalkStream® has a proven low impact on the surrounding water environment.

  • Freezing is the most natural way of preserving food. And as here at Coombe Farm Organic we believe in slow-grown, healthy food, a form of preservation that doesn’t need artificial additives gets a big tick from us.

Fisheries catch fillet and freeze all sustainable and organic fish before it arrives to us by blast freezing. It’s done at the point of the fishmongers filleting the fish, to temperatures of -26°C. This locks in all the freshness, flavour and nutritional value and means you get the longest possible shelf life at home once you’ve defrosted it.

It also guarantees it will arrive with you in tiptop condition - confidently delivering fresh fish would be much more challenging.

Impress your friends with a simple chalk stream trout twist on a scotch egg. Peel and boil your potatoes, once cooked mash these with butter allow to cool. Soft boil your eggs and put aside for later. In a pan cover your trout fillet and lemon with milk and poach until cooked take the trout out of the milk you need to let it cool, keep the milk to make a creamy sauce later. After your trout is cooled add this along with finely chopped spring onions to the mashed potato. Surround your egg with the trout and potato mix before rolling in seasoned flour and then egg now coat in breadcrumbs do this again until the ball is completely covered in breadcrumbs. This can be made in advance and then fry to brown off just before serving. On the hob thicken your milk by adding flour, butter and cream until thickened.
