Our head-to-hoof philosophy means we believe in making the best use of every carcass that comes through our butchery. We know that's one of the qualities that you, our customers, appreciate. However, this ethos comes with some pretty serious challenges.

Carcass balancing is that strange turn of phrase used in the meat business when talking about the cuts of meat that outsell others. For example, we sell ribeye steaks and oxtail and a much faster rate than beef mince and silverside. Our challenge is always to keep enough of those fast-moving lines in stock, without overloading ourselves the slower moving cuts. It's about balance!

So here we are, transparently asking for your help. We have filled The Balancing Organic Meat Box up with the slower moving, yet no less delicious organic meat that we need help to balance so that we can continue to keep a healthy stock of the things we know you all love to treat yourselves to.

We have significantly discounted the box - but not because the products are less valuable or delicious. Just because we need to keep them moving. This box may change from time to time.
