We are celebrating Organic September in true farming style and bringing you something a little bit different. If you are a foodie, or if you keep your eye on Instagram and Twitter you may have caught hold of a new trend sweeping our nation. The new ‘must order’ dish in many top restaurants is something called “Basque Beef”, known by us as retired dairy beef.
Sifting through different cattle breeds is quite a task, it certainly took us a long time to research in order to settle on our beloved Shorthorn breed for our beef cattle, each having differing characteristic that would make it a viable option as a beef breed, but this September we are taking the lime light away from our Shorthorn and introducing you to the other herd of cattle that are resident here at Coombe Farm – the gorgeous girls that make up our milking herd.
If you didn’t already know, our story actually began with a dairy herd. For almost 20 years Coombe Farm has been home to a strong herd of organic dairy cattle, whose millions of litres of organic milk are enjoyed in homes across our country every year. These days, Coombe Farm is home to our company; Coombe Farm Organic. Striving to provide you with a delicious and organic alternative to conventionally farmed meat, as well as organic condiments, pastries, puddings and even sustainably caught fish. Mindfulness is at the core of everything we do, from packing our items individually to eliminate any possibility of food waste for you at home, to growing native breeds to support our British farming heritage, even down to caring for every particle of soil that makes up our farming eco-system. Nurturing the soil that makes our enterprise possible is fundamental to ensure a farming future for generations to come. We are so proud to be a soil association certified farm, playing our small part in ‘creating a better world – one where we farm responsibly, eat healthily and live in balance with the environment’.
Throughout our entire farming system we ensure the highest possible standards of animal welfare, environmental and wildlife protection, all the while creating delicious food that can be fed to your family with complete confidence, having fully transparent traceability from our fields to your fork.
We love our livestock here at Coombe Farm, and feel it is our responsibility to use every last morsel of them when the time comes - including our dairy cows that are reaching retirement. These girls have been harnessing goodness from our luscious pastures here in our idyllic valley in Somerset for years, during which time the marbling within their muscles has matured, giving this beef the deepest of flavours. The stigma of this beef being cheap and tough is no longer! It is a rare treat to get your hands on this stuff and should be treated as something quite special. It has been tried and tested as to whether the cuts taken from ‘ex-dairy’ compare to that of pure beef breed cattle and if you ask us, it is just as sensational to eat, if not more so, and is essential to eat to make sure these beautiful girls are made the most of, and enjoyed as much as possible – by entering our food chain.
Our team of crafted butchers have created some exceptional cuts of meat from our retired dairy beef, including brisket on the bone for an amazingly tender slow cook, rump tail left as a whole piece for the most impeccable roast, insanely marbled rib eye steaks for a real treat, and melt in the mouth steak burgers for an everyday essential.
We are celebrating Organic September in the most mindful way we can, supporting a fantastic campaign with an animal that sums up in every mouthful what we stand for here at Coombe Farm Organic - so lets celebrate - together!
